Israeli Salad


Enjoy this diverse Israeli recipe. Israeli salad is a fresh, versatile dish that can be enjoyed any time of day. 

Ingredients


1 pound of cucumbers
1 pound of tomatoes
1/3 cup red onion
¼ cup fresh parsley
¼ cup fresh mint leaves
3 Tablespoons extra virgin olive oil 
3 Tablespoons lemon juice
Salt and pepper to taste
6 oz. Feta cheese (optional)

 

 

Directions

1.    Chop cucumbers and tomatoes in small pieces. 
2.    Dice onion. 
3.    Combine vegetables in a bowl. 
4.    Mix together parsley, mint, olive oil, lemon juice, salt, and pepper. 
5.    Drizzle over vegetables and mix well. 
6.    Add feta cheese if desired. 
7.    Enjoy!
